Almond biscuits "Kourabiedes"

MANI extra virgin olive oil

INGREDIENTS (for about 30 pieces)

  • 1 tsp. baking soda
  • 50 ml freshly squeezed orange juice
  • 100 ml MANI extra virgin olive oil
  • 1 egg
  • 100 g icing sugar
  • 50 ml Ouzo
  • 300 g flaked almonds
  • 200 g flour
  • 60g icing sugar for dusting

Preparation:

Preheat the oven to 170 degrees.
Dissolve the baking soda in the orange juice. Whip together for about 5 minutes the olive oil, the egg, the icing sugar and the ouzo with a whisk, until a pale yellow, foamy cream has formed. Add the flaked almonds and as much flour as necessary to obtain a soft, pliable dough. Cover and leave to rest for 45 minutes.
Shape the dough into slightly oval balls the size of a plum. Distribute on a baking sheet at some distance from each other and bake in a preheated oven at 170 degrees for about 20 minutes.
Generously sprinkle with icing sugar while still hot, serve and enjoy.

Kourabiedes are very popular pastry in Greece. The use of extra virgin olive oil gives these biscuits a very peculiar, distinctive touch. Try this sweet delicacy with Greek coffee. This is drunk traditionally bland and with little to no sugar.
